Ingredients
- 600g boneless lamb loin, cut into 3cm cubes
- 1 large sweet potato (approx. 400g), peeled and cubed
- 1 large courgette, cut into thick rounds
- 1 red bell pepper, cut into 3cm squares
- 1 red onion, cut into wedges
- 60ml extra virgin olive oil
- 3 cloves garlic, minced
- 2 sprigs fresh rosemary, finely chopped
- 1 tablespoon fresh thyme leaves
- Juice of 1 lemon
- Salt and black pepper to taste
Instructions
- 1.Place the sweet potato cubes in a pot of water, bring to a boil, and cook for 5-7 minutes until slightly tender but still firm. Drain well.
- 2.While the sweet potato cooks, whisk together the olive oil, minced garlic, chopped rosemary, thyme, lemon juice, salt, and pepper in a large bowl to create the marinade.
- 3.Add the lamb cubes, par-boiled sweet potato, courgette, bell pepper, and red onion to the marinade. Toss gently to coat everything evenly. Let marinate for at least 15 minutes.
- 4.Preheat a grill or oven to 200°C. If using wooden skewers, soak them in water for 10 minutes to prevent burning.
- 5.Thread the lamb and vegetables alternately onto the skewers.
- 6.Grill or roast for 12-15 minutes, turning occasionally, until the lamb is cooked to your liking and the vegetables are tender with a slight char.
- 7.Let the skewers rest for a couple of minutes before serving hot.
