Ingredients
- 300g cod fillets (2 fillets)
- 150g quinoa
- 200g cherry tomatoes
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 30g mixed fresh parsley and cilantro, chopped
- 1 lemon (for juice and zest)
- 30ml olive oil
- 5g ground cumin
- 5g smoked paprika
- 2g ground turmeric
- Salt and freshly ground black pepper to taste
Instructions
- 1.Preheat your oven to 200°C. In a small bowl, combine the minced garlic, half of the chopped herbs, lemon zest, cumin, paprika, turmeric, and olive oil. Season with salt and pepper to create a flavourful paste.
- 2.Pat the cod fillets dry and place them in a baking dish. Spread the paste evenly over the fish. Arrange the cherry tomatoes around the fillets.
- 3.While the oven preheats, rinse the quinoa under cold water. In a small pot, bring 300ml of water to a boil, add the quinoa, reduce heat, cover, and simmer for 15-20 minutes, or until all water is absorbed.
- 4.Bake the cod and tomatoes for 15-20 minutes, until the fish is opaque and flakes easily with a fork, and the tomatoes are blistered and soft.
- 5.Once the quinoa is cooked, remove it from the heat and let it stand, covered, for 5 minutes. Fluff it with a fork and stir in the remaining chopped herbs and a squeeze of lemon juice.
- 6.To serve, spoon the herbed quinoa onto two plates. Carefully place a baked cod fillet on top, and spoon the roasted tomatoes and any pan juices over the fish.
