Instructions
- 1.Pat the lamb chops dry. In a small bowl, mix 15 ml olive oil with the cumin, coriander, turmeric, cinnamon, salt, and pepper. Rub the spice mix all over the lamb chops and set aside.
- 2.Grate the cauliflower using a box grater or pulse it in a food processor until it resembles couscous. Finely dice the red onion, red bell pepper, and mince the garlic.
- 3.Heat 15 ml of olive oil in a large skillet over medium-high heat. Add the lamb chops and cook for 3-4 minutes per side for medium-rare, or until cooked to your liking. Remove from the pan and let them rest.
- 4.In the same skillet, add the remaining 15 ml of olive oil. Sauté the diced onion and bell pepper for 4-5 minutes until softened. Add the minced garlic and cook for another minute until fragrant.
