Ingredients
- 150g green or Puy lentils
- 200g carrots, peeled and chopped
- 200g parsnips, peeled and chopped
- 1 small red onion, sliced
- 2 cloves garlic, minced
- 45ml extra virgin olive oil, divided
- 15ml fresh lemon juice
- 500ml vegetable broth or water
- 50g arugula or baby spinach
- 1 teaspoon Dijon mustard
- Small bunch of fresh parsley, chopped
- Salt and freshly ground black pepper to taste
Instructions
- 1.Preheat your oven to 200°C (400°F). On a baking tray, toss the chopped carrots, parsnips, and red onion with 30ml of olive oil, salt, and pepper. Roast for 25-30 minutes, or until tender and lightly caramelized.
- 2.While the vegetables are roasting, rinse the lentils. In a medium pot, combine the lentils, vegetable broth (or water), and minced garlic. Bring to a boil, then reduce heat and simmer for 20-25 minutes, until lentils are tender but still hold their shape. Drain any excess liquid.
- 3.In a small bowl, prepare the dressing by whisking together the remaining 15ml of olive oil, fresh lemon juice, Dijon mustard, and chopped parsley. Season with a pinch of salt and pepper.
- 4.In a large serving bowl, combine the warm cooked lentils and the roasted vegetables.
- 5.Pour the lemon-herb dressing over the lentil and vegetable mixture and toss gently to combine everything well.
- 6.Just before serving, gently fold in the fresh arugula. The residual heat will slightly wilt the greens. Serve warm.
