Instructions
- 1.Pat the cod fillets dry with a paper towel and season both sides lightly with salt and pepper.
- 2.Heat the olive oil in a large skillet or wide pot over medium heat. Add the chopped onion and sauté for 5-7 minutes until softened and translucent.
- 3.Add the minced garlic, ground cumin, ground coriander, turmeric, and smoked paprika to the skillet. Stir constantly for 1 minute until the spices are very fragrant.
- 4.Pour in the chopped tomatoes, rinsed chickpeas, and vegetable stock. Stir everything together, bring to a simmer, and cook for 10 minutes, allowing the sauce to thicken slightly.
