Ingredients
- 2 tablespoons olive oil (30ml)
- 1 large onion, chopped
- 3 cloves garlic, minced
- 2 medium sweet potatoes (~500g), peeled and cubed
- 200g brown or green lentils, rinsed
- 2 teaspoons ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon turmeric
- 1 can (400g) diced tomatoes
- 1000ml vegetable broth
- 150g kale, stems removed and leaves chopped
- Juice of 1/2 lemon
- Salt and freshly ground black pepper to taste
Instructions
- 1.Heat the olive oil in a large pot or Dutch oven over medium heat. Add the chopped onion and cook for 5-7 minutes, until softened and translucent.
- 2.Add the minced garlic, ground cumin, coriander, and turmeric. Cook for one minute more until fragrant, stirring constantly.
- 3.Stir in the cubed sweet potatoes, rinsed lentils, diced tomatoes (with their juice), and vegetable broth. Season with a pinch of salt and pepper.
- 4.Bring the stew to a boil, then reduce the heat to a low simmer. Cover the pot and cook for 25-30 minutes, or until the lentils and sweet potatoes are tender.
- 5.Stir in the chopped kale and cook for another 5 minutes, until the leaves have wilted into the stew.
- 6.Remove from the heat and stir in the fresh lemon juice. Taste and adjust seasoning with more salt and pepper if needed before serving.
