Ingredients
- 400g lamb mince
- 1 medium head of cauliflower
- 200g cherry tomatoes, halved
- 1/2 cucumber, diced
- 1/2 red onion, finely chopped
- 1 large bunch fresh parsley, chopped
- 1 small bunch fresh mint, chopped
- 2 cloves garlic, minced
- 1 lemon
- 3 tablespoons extra virgin olive oil
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- Salt and black pepper to taste
Instructions
- 1.To prepare the koftas, combine the lamb mince, half the minced garlic, ground cumin, ground coriander, half the chopped parsley, salt, and pepper in a bowl. Mix well and form into 8-10 small oval patties.
- 2.Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Cook the koftas for 3-4 minutes per side, until browned and cooked through. Set aside and keep warm.
- 3.For the tabbouleh, grate the cauliflower head on a box grater or pulse it in a food processor until it resembles coarse grains. Transfer to a large serving bowl.
- 4.Add the halved cherry tomatoes, diced cucumber, finely chopped red onion, the remaining chopped parsley, and all the chopped mint to the bowl with the cauliflower.
- 5.In a small bowl, whisk together the juice of 1 lemon, 2 tablespoons of olive oil, the remaining minced garlic, salt, and pepper to create the dressing.
- 6.Pour the dressing over the cauliflower mixture and toss everything together until well combined. Serve the tabbouleh immediately, topped with the warm lamb koftas.
