Ingredients
- 1000g fresh mussels, cleaned and debearded
- 2 tablespoons extra virgin olive oil
- 1 small onion, finely chopped
- 3 cloves garlic, thinly sliced
- 250g cherry tomatoes, halved
- 240g canned chickpeas, rinsed and drained
- 120ml water
- 1 lemon, zested and juiced
- 30g fresh parsley, chopped
- Freshly ground black pepper, to taste
- Salt, to taste
Instructions
- 1.Heat the olive oil in a large pot or Dutch oven over medium heat. Add the chopped onion and cook for 3-4 minutes until softened.
- 2.Add the sliced garlic and cook for another minute until fragrant. Stir in the halved cherry tomatoes and chickpeas, and season lightly with salt and pepper.
- 3.Increase the heat to high, add the cleaned mussels and 120ml of water. Immediately cover the pot with a tight-fitting lid.
- 4.Steam for 5-7 minutes, shaking the pot occasionally, until the mussels have opened. Discard any mussels that remain closed.
- 5.Remove from heat. Stir in the fresh parsley, lemon juice, and lemon zest. Serve immediately, spooning the broth over the mussels.
