Ingredients
- 250g lean lamb mince
- 1 can (400g) chickpeas, drained and rinsed
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 200g cherry tomatoes
- 150g fresh spinach
- 15ml olive oil
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon smoked paprika
- Juice of 1/2 lemon
- Small bunch of fresh parsley, chopped
- Salt and black pepper to taste
Instructions
- 1.Heat the olive oil in a large skillet or pan over medium-high heat. Add the chopped onion and sauté for 3-4 minutes until softened.
- 2.Add the lamb mince to the skillet, breaking it up with a spoon. Cook for 5-7 minutes until browned. Stir in the minced garlic, cumin, coriander, and smoked paprika, and cook for one more minute until fragrant.
- 3.Add the drained chickpeas and cherry tomatoes to the skillet. Season with salt and pepper. Cook for 5 minutes, stirring occasionally, until the tomatoes begin to soften and burst.
- 4.Add the fresh spinach to the pan in batches, stirring until it has wilted completely, which should take about 2-3 minutes.
- 5.Remove the skillet from the heat. Squeeze the lemon juice over the top and stir in the fresh parsley. Serve immediately.
