Ingredients
- 4 large bell peppers (various colors)
- 400g lean ground lamb
- 100g uncooked quinoa
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 medium zucchini, finely diced
- 200g cherry tomatoes, halved
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- 1/2 teaspoon ground cumin
- 3 tablespoons fresh parsley, chopped
- 2 tablespoons fresh mint, chopped
- 200ml vegetable broth
- Salt and freshly ground black pepper to taste
Instructions
- 1.Preheat oven to 200°C. Cook the quinoa according to package directions. Meanwhile, cut the bell peppers in half lengthwise and remove the seeds and membranes.
- 2.Heat olive oil in a large pan over medium-high heat. Add the chopped onion and garlic, and sauté for 2-3 minutes until fragrant. Add the ground lamb and cook until browned, breaking it apart with a spoon.
- 3.Stir in the diced zucchini, oregano, and cumin. Cook for another 5 minutes until the zucchini is tender. Drain any excess fat from the pan.
- 4.Remove the pan from the heat. Stir in the cooked quinoa, halved cherry tomatoes, fresh parsley, and fresh mint. Season well with salt and pepper.
- 5.Arrange the bell pepper halves cut-side-up in a baking dish. Spoon the lamb and quinoa mixture evenly into each pepper half. Pour the vegetable broth into the bottom of the dish.
- 6.Cover the dish with foil and bake for 20 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the peppers are tender and the filling is golden on top.
