Ingredients
- 2 large zucchini (about 600g total)
- 250g lean lamb mince
- 150g cooked brown or green lentils (canned is fine, drained and rinsed)
- 1 small red onion, finely chopped
- 2 cloves garlic, minced
- 100g cherry tomatoes, quartered
- 1 tablespoon olive oil (15ml)
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano
- Juice of 1/2 lemon
- Handful of fresh parsley, chopped
- Salt and black pepper to taste
Instructions
- 1.Preheat your oven to 200°C (180°C fan). Slice the zucchini in half lengthwise and use a spoon to scoop out the flesh, leaving a 1cm thick border. Roughly chop the scooped-out flesh and set aside.
- 2.Heat the olive oil in a large pan over medium-high heat. Add the chopped red onion and cook for 3-4 minutes until softened. Add the minced garlic and cook for another minute until fragrant.
- 3.Add the lean lamb mince to the pan, breaking it up with a spoon. Cook until browned all over. Drain any excess fat.
- 4.Stir in the cumin, oregano, chopped zucchini flesh, and a pinch of salt and pepper. Cook for 5 minutes until the zucchini flesh has softened.
- 5.Remove the pan from the heat. Stir in the cooked lentils, quartered cherry tomatoes, fresh parsley, and lemon juice. Mix well to combine.
- 6.Arrange the hollowed-out zucchini boats on a baking tray. Carefully spoon the lamb and lentil mixture into each boat, piling it high.
- 7.Bake for 20-25 minutes, or until the zucchini boats are tender and the filling is heated through. Serve immediately.
