- 600g lamb loin chops (4 chops)
- 500g parsnips, peeled and chopped
- 300g carrots, peeled and chopped
- 1 large zucchini, cut into chunks
- 1 large red bell pepper, cut into chunks
- 200g cherry tomatoes
- 4 cloves garlic
- 2 sprigs fresh rosemary
- 1 sprig fresh thyme
- 45 ml extra virgin olive oil
- 15 ml lemon juice
- Salt to taste
- Freshly ground black pepper to taste
Instructions
- 1.Preheat oven to 200°C. Place chopped parsnips, carrots, and 2 whole garlic cloves in a pot, cover with water, and boil. Simmer for 15-20 minutes until very tender.
- 2.On a baking tray, toss zucchini, bell pepper, and cherry tomatoes with 15 ml of olive oil, salt, and pepper. Roast for 20-25 minutes until tender and caramelized.
- 3.Mix 2 minced garlic cloves, finely chopped rosemary, thyme, 15 ml of olive oil, salt, and pepper. Rub the mixture evenly over the lamb chops.
- 4.Heat the remaining 15 ml of olive oil in a large skillet over medium-high heat. Sear the lamb chops for 3-4 minutes per side for medium-rare. Let rest for 5 minutes.
- 5.Drain the cooked parsnips and carrots. Mash until smooth, adding a splash of cooking water if needed for a purée consistency. Season with salt and pepper.
- 6.Serve the lamb chops over the parsnip-carrot purée with roasted vegetables on the side. Drizzle with fresh lemon juice before serving.
