Ingredients
- 1 tbsp olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 400g sweet potato, peeled and cubed
- 150g red lentils, rinsed
- 750ml vegetable broth
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp turmeric powder
- 100g kale, chopped
- Juice of 1/2 lemon
- Salt and black pepper to taste
Instructions
- 1.Heat the olive oil in a large pot or Dutch oven over medium heat. Add the chopped onion and cook for 5-7 minutes until softened and translucent.
- 2.Add the minced garlic, ground cumin, ground coriander, and turmeric. Cook for another minute until fragrant, stirring constantly.
- 3.Stir in the cubed sweet potato, rinsed red lentils, and vegetable broth. Bring the mixture to a boil.
- 4.Reduce the heat to a simmer, cover, and cook for 20-25 minutes, or until the lentils and sweet potatoes are tender.
- 5.Stir in the chopped kale and cook for another 2-3 minutes until the leaves have wilted completely.
- 6.Remove from heat. Stir in the fresh lemon juice and season with salt and pepper to your taste. Serve hot.
