Ingredients
- 4 large bell peppers (assorted colors)
- 300g lean lamb mince
- 1 large onion, finely chopped
- 2 cloves garlic, minced
- 100g dried green lentils, rinsed
- 400g canned chopped tomatoes
- 250ml low-sodium vegetable stock
- 2 tablespoons olive oil
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon smoked paprika
- Handful of fresh parsley, chopped
- Handful of fresh mint, chopped
- Salt and freshly ground black pepper to taste
Instructions
- 1.Preheat your oven to 200°C (180°C fan). Slice the tops off the bell peppers and carefully remove the seeds and white membranes. Arrange them standing up in a baking dish.
- 2.Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the onion and sauté for 5 minutes until soft. Add the garlic and cook for another minute until fragrant.
- 3.Add the lamb mince to the skillet, breaking it apart with a spoon, and cook until browned all over. Drain off any excess fat if necessary.
- 4.Stir in the rinsed lentils, canned tomatoes, vegetable stock, cumin, coriander, and smoked paprika. Season with salt and pepper.
- 5.Bring the mixture to a simmer, then reduce the heat to low, cover, and let it cook for 15-20 minutes, or until the lentils are tender and have absorbed most of the liquid.
- 6.Remove the skillet from the heat and stir in the chopped fresh parsley and mint.
- 7.Generously stuff each bell pepper with the lamb and lentil filling. Drizzle the tops with the remaining tablespoon of olive oil.
- 8.Pour a small amount of water (about 1 cm) into the bottom of the baking dish to create steam. Bake for 25-30 minutes, until the peppers are tender and the filling is hot. Serve immediately.
