Ingredients
- 600g lean lamb leg or shoulder, cut into 2cm cubes
- 800g sweet potatoes, peeled and cut into 3cm chunks
- 300g carrots, peeled and sliced
- 1 large onion, chopped
- 4 cloves garlic, minced
- 100g dried apricots, halved
- 30ml olive oil
- 750ml low-sodium vegetable broth
- 1 tablespoon ground cumin
- 1 tablespoon ground coriander
- 2 teaspoons turmeric powder
- 1 teaspoon ground cinnamon
- 1 teaspoon grated fresh ginger
- Juice of 1 lemon
- 1 bunch fresh cilantro, chopped
- Salt and freshly ground black pepper to taste
Instructions
- 1.Pat the lamb cubes dry and season generously with salt and pepper. In a large pot or Dutch oven, heat the olive oil over medium-high heat.
- 2.Brown the lamb in batches to avoid overcrowding the pot, searing on all sides. Remove the lamb and set it aside.
- 3.Reduce the heat to medium, add the chopped onion, and sauté for 5-7 minutes until softened. Add the minced garlic and grated ginger, cooking for one more minute until fragrant.
- 4.Stir in the cumin, coriander, turmeric, and cinnamon, toasting the spices for about 30 seconds until they release their aroma.
- 5.Return the browned lamb to the pot. Add the sweet potatoes, carrots, dried apricots, and vegetable broth. Stir to combine and bring the mixture to a simmer.
- 6.Once simmering, reduce the heat to low, cover the pot, and let it cook for 45-50 minutes, or until the lamb is tender and the sweet potatoes are easily pierced with a fork.
- 7.Remove from the heat. Stir in the fresh lemon juice and most of the chopped cilantro. Adjust seasoning with salt and pepper as needed. Serve hot, garnished with the remaining cilantro.
