Ingredients
- 500g ground lamb
- 1 large head cauliflower, cut into florets
- 1 red onion, finely chopped
- 3 cloves garlic, minced
- 250g cherry tomatoes, quartered
- 1 cucumber, finely diced
- 50g fresh parsley, chopped
- 25g fresh mint, chopped
- 2 tsp ground cumin
- 2 tsp ground coriander
- 1 tsp smoked paprika
- 1/2 tsp turmeric powder
- 60ml extra virgin olive oil
- Juice of 2 lemons
- Salt and freshly ground black pepper to taste
Instructions
- 1.In a large bowl, combine the ground lamb, half of the chopped red onion, minced garlic, cumin, coriander, paprika, turmeric, salt, and pepper. Mix well and form the mixture into small, oval-shaped koftas.
- 2.Heat 30ml (2 tbsp) of olive oil in a large skillet over medium-high heat. Carefully place the koftas in the pan and cook for 8-10 minutes, turning occasionally, until browned on all sides and cooked through.
- 3.While the koftas are cooking, prepare the tabbouleh. Pulse the cauliflower florets in a food processor until it reaches a couscous-like consistency. Transfer to a large serving bowl.
- 4.Add the remaining chopped red onion, quartered cherry tomatoes, diced cucumber, chopped parsley, and mint to the cauliflower rice.
- 5.In a small bowl, whisk together the remaining 30ml (2 tbsp) of olive oil, the lemon juice, salt, and pepper to create the dressing.
- 6.Pour the dressing over the cauliflower mixture and toss gently to combine all ingredients thoroughly.
- 7.To serve, divide the herbed cauliflower tabbouleh among four plates and top with the warm spiced lamb koftas.
