- 400g canned diced tomatoes
- 1 can (approx. 240g drained) brown or green lentils, rinsed
- 100g fresh baby spinach
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon turmeric
- Juice of 1/2 lemon
- Salt and black pepper to taste
Instructions
- 1.Heat olive oil in a large skillet over medium heat. Sauté the chopped onion for 3-4 minutes until soft. Add garlic, cumin, coriander, and turmeric; cook for 1 minute until fragrant.
- 2.Add the ground lamb to the skillet. Cook for 5-7 minutes, breaking it apart with a spoon, until browned. Drain any excess fat.
- 3.Stir in the diced tomatoes and rinsed lentils. Season with salt and pepper. Bring to a simmer, then reduce heat, cover, and cook for 10 minutes.
- 4.Add the baby spinach in handfuls, stirring until it wilts completely, about 2-3 minutes.
- 5.Remove from heat, stir in the fresh lemon juice, and serve immediately.
