- 400g can of brown or green lentils, drained and rinsed

- 150g cherry tomatoes, halved
- 100g fresh spinach
- 15 ml olive oil
- 5g ground cumin
- 5g ground coriander
- 100g plain Greek yogurt
- 10g fresh mint, finely chopped
- 15 ml lemon juice
- Salt and black pepper to taste
Instructions
- 1.Heat the olive oil in a large skillet over medium-high heat. Add the chopped onion and cook for 3-4 minutes until softened.
- 2.Add the minced garlic, ground cumin, and ground coriander. Sauté for 1 minute until fragrant.
- 3.Add the ground lamb to the skillet, breaking it up with a spoon. Cook for 5-7 minutes until browned. Drain any excess fat if needed.
- 4.Stir in the drained lentils and halved cherry tomatoes. Season with salt and pepper and cook for 5 minutes for the flavors to meld.
- 5.Add the fresh spinach in handfuls, stirring continuously until it has completely wilted, which should take about 2-3 minutes.
- 6.In a small bowl, mix together the Greek yogurt, chopped fresh mint, and lemon juice to create the sauce.
- 7.Serve the warm lamb and lentil skillet immediately, topped with a generous dollop of the minted yogurt.
