- 2 sprigs fresh thyme

Instructions
- 1.Prepare your vegetables. Use a spiralizer to turn the sweet potatoes into 'noodles'. Finely chop the onion, mince the garlic, and slice the mushrooms.
- 2.Heat 15ml of olive oil in a large pan or Dutch oven over medium-high heat. Add the onion and sauté for 3-4 minutes until softened. Add the garlic and cook for another minute until fragrant.
- 3.Add the lamb mince to the pan. Break it up with a spoon and cook until browned all over, about 5-7 minutes. Drain any excess fat if necessary.
