- 300g lean lamb mince
- 2 medium zucchini
- 1 red onion
- 2 cloves garlic
- 20g fresh mint
- 20g fresh parsley
- 1 lemon
- 30ml extra virgin olive oil
- 1 tsp dried oregano
- Salt and black pepper to taste
Instructions
- 1.In a bowl, combine the lamb mince, half of the chopped parsley, half of the chopped mint, one minced garlic clove, dried oregano, salt, and pepper. Finely chop half the red onion and add it to the mix. Form into 4 small patties.
- 2.Use a vegetable peeler to slice the zucchini into long, thin ribbons. Thinly slice the remaining half of the red onion.
- 3.In a separate large bowl, combine the zucchini ribbons, sliced red onion, and the remaining chopped parsley and mint.
- 4.Prepare the dressing by whisking together the olive oil, the juice of the lemon, and the second minced garlic clove. Season with a pinch of salt and pepper.
- 5.Heat a skillet or pan over medium-high heat. Cook the lamb patties for about 3-4 minutes per side until browned and cooked through.
- 6.Drizzle the dressing over the zucchini salad and toss to combine. Serve the warm lamb patties alongside the fresh salad.
