- 100g brown lentils, rinsed

- 2 cloves garlic, minced
- 1 large carrot, diced
- 1 celery stalk, diced
- 400g chopped tomatoes
- 500ml low-sodium vegetable broth
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 50g fresh spinach
- 1 tablespoon olive oil
- Juice of 1/2 lemon
- Salt and freshly ground black pepper to taste
Instructions
- 1.Heat olive oil in a large pot or Dutch oven over medium-high heat. Add the chopped onion, carrot, and celery, and sauté for 5-7 minutes until softened. Add the minced garlic and cook for another minute until fragrant.
- 2.Add the ground lamb to the pot. Break it up with a spoon and cook until browned, about 5 minutes. Drain any excess fat if necessary.
- 3.Stir in the ground cumin and coriander, and cook for 30 seconds. Add the rinsed lentils, chopped tomatoes, and vegetable broth. Season with salt and pepper.
