- 300g lean lamb loin, cut into cubes
- 150g quinoa
- 1 medium eggplant (approx. 250g), cubed
- 1 medium zucchini (approx. 200g), cubed
- 200g cherry tomatoes

- 2 tablespoons fresh parsley, chopped

Instructions
- 1.Preheat your oven to 200°C (400°F). Rinse the quinoa under cold water. In a small pot, combine the quinoa with 300ml of water and a pinch of salt. Bring to a boil, then reduce heat, cover, and simmer for 15 minutes or until the water is absorbed. Fluff with a fork.
- 2.While the quinoa cooks, toss the cubed eggplant, zucchini, and cherry tomatoes with 1 tablespoon of olive oil, dried oregano, salt, and pepper on a baking sheet. Roast for 20-25 minutes, until tender and slightly caramelized.
- 3.Pat the lamb cubes dry and season generously with salt and pepper. Heat the remaining 1 tablespoon of olive oil in a skillet over medium-high heat. Add the minced garlic and cook for 30 seconds until fragrant.
- 4.Add the lamb cubes to the skillet in a single layer. Sear for 2-3 minutes per side until browned and cooked to your liking.
