Ingredients
- 300g lamb loin or leg steak, cubed
- 150g quinoa
- 300ml water or vegetable broth
- 400g carrots, peeled and cut into batons
- 1 red onion, thinly sliced
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon turmeric
- Juice of 1/2 lemon
- Salt and freshly ground black pepper to taste
- Handful of fresh mint or parsley, chopped
Instructions
- 1.Preheat your oven to 200°C. On a baking tray, toss the carrot batons with 1 tablespoon of olive oil, salt, and pepper. Roast for 20-25 minutes until tender and slightly caramelized.
- 2.While the carrots roast, place the lamb cubes in a bowl. Add the ground cumin, coriander, cinnamon, turmeric, half the minced garlic, salt, and pepper. Mix well to coat the lamb.
- 3.Rinse the quinoa thoroughly under cold water. In a medium saucepan, bring 300ml of water to a boil. Add the quinoa, reduce the heat to low, cover, and let it simmer for 15-20 minutes, or until all the water is absorbed.
- 4.Heat the remaining 1 tablespoon of olive oil in a skillet over medium-high heat. Sauté the sliced red onion for 3-4 minutes until softened. Add the remaining garlic and cook for another minute until fragrant.
- 5.Add the marinated lamb to the skillet. Cook for 5-7 minutes, stirring occasionally, until the lamb is browned and cooked to your liking.
- 6.Fluff the cooked quinoa with a fork and stir in the fresh lemon juice. Divide the quinoa between two plates. Top with the spiced lamb and onions, and serve with the roasted carrots on the side. Garnish with fresh mint or parsley before serving.
