Ingredients
- 200g brown or green lentils, rinsed
- 500g sweet potatoes, peeled and cubed
- 300g carrots, peeled and sliced
- 300g parsnips, peeled and cubed
- 1 large onion, chopped
- 3 cloves garlic, minced
- 45ml olive oil, divided
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp smoked paprika
- 1/2 tsp turmeric
- 60g tahini
- 60ml lemon juice
- Salt and black pepper to taste
- Fresh parsley, chopped, for garnish
Instructions
- 1.Preheat oven to 200°C. On a large baking sheet, toss the sweet potatoes, carrots, and parsnips with 30ml olive oil, smoked paprika, half the cumin, salt, and pepper. Roast for 25-30 minutes, until tender and lightly caramelized.
- 2.While the vegetables roast, heat the remaining 15ml olive oil in a pot over medium heat. Add the chopped onion and sauté for 5 minutes until softened. Add the minced garlic and cook for another minute until fragrant.
- 3.Stir in the remaining cumin, ground coriander, and turmeric. Add the rinsed lentils and 1 liter of water. Bring to a boil, then reduce heat, cover, and simmer for 20-25 minutes, until the lentils are tender. Drain any excess water.
- 4.In a small bowl, whisk together the tahini, lemon juice, and 60-80ml of water until you have a smooth, pourable sauce. Season with a pinch of salt.
- 5.Combine the cooked lentils and roasted vegetables in a large bowl. Serve warm, drizzled with the tahini sauce and garnished with fresh parsley.
