Ingredients
- 300g lamb cutlets (about 4 small cutlets)
- 100g dry beluga lentils
- 1 large fennel bulb, sliced
- 150g cherry tomatoes
- 2 cloves garlic, minced
- 1 lemon (for juice and zest)
- 15g fresh mint, chopped
- 15g fresh parsley, chopped
- 45ml extra virgin olive oil, divided
- Salt and black pepper to taste
Instructions
- 1.Preheat your oven to 200°C. On a baking tray, toss the sliced fennel and cherry tomatoes with 15ml of olive oil, salt, and pepper. Roast for 20-25 minutes until tender and slightly caramelized.
- 2.While the vegetables roast, rinse the beluga lentils and place them in a small pot with 500ml of water. Bring to a boil, then reduce heat and simmer for 20-25 minutes, or until tender but not mushy. Drain well.
- 3.In a small bowl, prepare the dressing by whisking together the remaining 30ml of olive oil, the juice and zest of one lemon, minced garlic, chopped mint, and parsley.
- 4.Pat the lamb cutlets dry and season generously with salt and pepper. Heat a skillet over medium-high heat. Sear the cutlets for 2-3 minutes per side for medium-rare. Let them rest for 5 minutes.
- 5.In a large bowl, combine the warm roasted vegetables and cooked lentils. Pour over most of the dressing and toss to combine.
- 6.To serve, divide the lentil salad between two plates. Place two lamb cutlets on top of each salad and drizzle with the remaining dressing.
