Ingredients
- 500g lamb shoulder or leg, cut into 2cm cubes
- 200g brown or green lentils, rinsed
- 80g dried apricots, roughly chopped
- 1 large onion, chopped
- 3 cloves garlic, minced
- 2 medium carrots, diced
- 2 stalks celery, diced
- 1 liter vegetable or lamb stock
- 400g can chopped tomatoes
- 2 tablespoons olive oil
- 2 teaspoons ground cumin
- 2 teaspoons ground coriander
- 1 teaspoon turmeric powder
- 1/2 teaspoon ground cinnamon
- Salt and freshly ground black pepper to taste
- Fresh parsley or cilantro, chopped, for garnish
Instructions
- 1.Heat the olive oil in a large pot or Dutch oven over medium-high heat. Pat the lamb cubes dry and season with salt and pepper. Brown the lamb in batches, then set aside.
- 2.Reduce the heat to medium. Add the chopped onion, carrots, and celery to the pot and sauté for 6-8 minutes, until softened.
- 3.Add the minced garlic, cumin, coriander, turmeric, and cinnamon. Cook for 1 minute more until fragrant, stirring constantly.
- 4.Return the browned lamb to the pot. Stir in the rinsed lentils, chopped tomatoes, and stock. Bring the mixture to a boil.
- 5.Once boiling, reduce the heat to low, cover the pot, and let it simmer gently for 45-50 minutes, or until the lamb is tender and the lentils are cooked through.
- 6.Stir in the chopped dried apricots and continue to simmer for another 10 minutes to allow the flavors to meld.
- 7.Taste and adjust seasoning with salt and pepper as needed. Serve hot, garnished with a sprinkle of fresh parsley or cilantro.
