Ingredients
- 100g quinoa
- 200ml water
- 250g lean ground lamb
- 1 medium zucchini (approx. 200g), diced
- 1 red bell pepper, diced
- 150g cherry tomatoes, halved
- 1 small red onion, finely chopped
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 1 lemon, juiced
- 10g fresh mint, chopped
- 10g fresh parsley, chopped
- 1 teaspoon ground cumin
- 1/2 teaspoon ground coriander
- 1/2 teaspoon smoked paprika
- Salt and black pepper to taste
Instructions
- 1.Rinse the quinoa under cold water. In a small pot, combine the quinoa and 200ml of water. Bring to a boil, then reduce heat to low, cover, and simmer for 12-15 minutes until all the water is absorbed. Set aside and fluff with a fork.
- 2.While the quinoa cooks, heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the ground lamb and cook until browned, breaking it apart with a spoon. Drain any excess fat if necessary.
- 3.Add the chopped red onion and minced garlic to the skillet. Sauté for 2-3 minutes until softened. Stir in the cumin, coriander, and smoked paprika, and cook for another minute until fragrant.
- 4.Add the diced zucchini and bell pepper to the skillet. Cook for 5-7 minutes, stirring occasionally, until the vegetables are tender-crisp.
- 5.Gently stir in the cooked quinoa, halved cherry tomatoes, and half of the chopped mint and parsley. Season with salt and pepper and cook for 2 more minutes until the tomatoes have just softened.
- 6.In a small bowl, whisk together the remaining 1 tablespoon of olive oil, lemon juice, and the rest of the fresh herbs to create a simple dressing. Drizzle over the skillet just before serving.
