Ingredients
- 500g ground lamb
- 400g sweet potato, peeled and cubed
- 250g carrots, peeled and cubed
- 200g parsnip, peeled and cubed
- 1 large red onion, cut into wedges
- 3 cloves garlic, minced
- 45ml olive oil
- 2 tsp ground cumin
- 2 tsp ground coriander
- 1 tsp turmeric powder
- 1 tsp smoked paprika
- 1/2 tsp ground cinnamon
- Salt and freshly ground black pepper to taste
- 1 small bunch fresh parsley or cilantro, chopped
Instructions
- 1.Preheat your oven to 200°C (400°F). On a large baking sheet, toss the cubed sweet potato, carrots, parsnip, and red onion wedges with 30ml of the olive oil.
- 2.Sprinkle the vegetables with half of the spices (1 tsp cumin, 1 tsp coriander, 1/2 tsp turmeric, 1/2 tsp paprika), salt, and pepper. Roast for 15 minutes.
- 3.While the vegetables are roasting, combine the ground lamb, minced garlic, the remaining spices, half of the chopped parsley, salt, and pepper in a medium bowl. Mix gently to combine.
- 4.Form the lamb mixture into 16-20 small meatballs (about 2-3 cm in diameter).
- 5.After 15 minutes, remove the baking sheet from the oven. Push the vegetables to the sides and arrange the meatballs in a single layer in the center.
- 6.Return the sheet to the oven and roast for an additional 15-20 minutes, or until the vegetables are tender and the meatballs are fully cooked through.
- 7.Serve immediately, garnished with the remaining fresh parsley or cilantro.
