Ingredients
- 250g lean ground lamb
- 1 can (400g) pre-cooked green or brown lentils, rinsed and drained
- 150g fresh baby spinach
- 150g cherry tomatoes, halved
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 tbsp olive oil
- 1 tsp ground cumin
- 1/2 tsp ground coriander
- 1/4 tsp turmeric
- Juice of 1/2 lemon
- Salt and black pepper to taste
Instructions
- 1.Heat the olive oil in a large skillet or pan over medium-high heat. Add the chopped onion and sauté for 3-4 minutes until softened.
- 2.Add the ground lamb and minced garlic. Cook for 5-7 minutes, breaking the meat apart with a spoon, until it's browned. Drain any excess fat if needed.
- 3.Stir in the ground cumin, coriander, and turmeric. Season with salt and pepper and cook for 1 minute until fragrant.
- 4.Add the drained lentils and halved cherry tomatoes to the skillet. Stir to combine and cook for 3-4 minutes until the tomatoes begin to soften.
- 5.Add the spinach to the pan in batches, stirring continuously until it has all wilted into the lamb and lentil mixture.
- 6.Remove the skillet from the heat. Squeeze the fresh lemon juice over the top, stir once more, and serve immediately.
