Ingredients
- 120g millet
- 200g carrots
- 150g parsnips
- 150g sweet potato
- 240g cooked chickpeas (1 can, drained and rinsed)
- 15ml olive oil
- 5g ground cumin
- 5g ground coriander
- 3g smoked paprika
- 30g tahini
- 30ml fresh lemon juice
- 1 clove garlic, minced
- Salt and freshly ground black pepper to taste
- Fresh parsley, for garnish
Instructions
- 1.Preheat your oven to 200°C. Chop the carrots, parsnips, and sweet potato into bite-sized (approx. 2cm) cubes.
- 2.On a large baking sheet, toss the cubed vegetables and drained chickpeas with olive oil, ground cumin, ground coriander, smoked paprika, salt, and pepper until evenly coated.
- 3.Roast for 25-30 minutes, tossing halfway through, until the vegetables are tender and caramelized, and the chickpeas are slightly crisped.
- 4.While the vegetables roast, cook the millet. Combine 120g of rinsed millet with 300ml of water and a pinch of salt in a small pot. Bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes until water is absorbed.
- 5.For the dressing, whisk together the tahini, lemon juice, and minced garlic in a bowl. Gradually add 45-60ml of water while whisking until you reach a smooth, pourable consistency. Season with a pinch of salt.
- 6.To assemble, fluff the cooked millet with a fork and divide between two bowls. Top with the roasted vegetables and chickpeas. Drizzle generously with the lemon-tahini dressing and garnish with fresh parsley.
