- 800ml vegetable broth

Instructions
- 1.Heat the olive oil in a large pot or Dutch oven over medium heat. Add the chopped onion and cook for 5-7 minutes until softened.
- 2.Add the minced garlic, cumin, coriander, and turmeric. Stir constantly for one minute until fragrant.
- 3.Add the cubed sweet potato, rinsed lentils, and vegetable broth to the pot. Stir everything together and bring to a boil.
- 4.Reduce the heat to low, cover the pot, and let it simmer for 25-30 minutes, or until the lentils and sweet potatoes are tender.
- 5.Stir in the fresh spinach and cook for another 2-3 minutes until it has wilted completely into the stew.
