Ingredients
- 400g lean lamb mince
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 15g fresh parsley, chopped
- 15g fresh mint, chopped
- 5g ground cumin
- 5g ground coriander
- 5g smoked paprika
- 150g plain Greek yogurt
- 1 large cucumber
- 2 medium tomatoes, diced
- 1 lemon
- 15ml olive oil
- Salt and freshly ground black pepper to taste
Instructions
- 1.In a large bowl, combine the lamb mince, half of the chopped onion, all the minced garlic, half the parsley, half the mint, cumin, coriander, and paprika. Season with salt and pepper. Mix well with your hands and form into 8 small, oval-shaped koftas.
- 2.Heat a large non-stick pan over medium-high heat. Cook the koftas for 8-10 minutes, turning occasionally, until browned on all sides and cooked through. Set aside.
- 3.While the koftas cook, prepare the sauce. Grate half of the cucumber and squeeze out the excess water. In a small bowl, mix the grated cucumber with the Greek yogurt, the remaining mint, and the juice of half a lemon. Season with a pinch of salt.
- 4.Prepare the salad. Dice the remaining half of the cucumber and combine it in a bowl with the diced tomatoes, the remaining onion, and the remaining parsley. Drizzle with olive oil and the juice of the other half of the lemon. Toss gently to combine.
- 5.Serve the warm lamb koftas immediately with the cucumber-tomato salad and a generous dollop of the herbed yogurt sauce.
