- 180g quinoa, rinsed
- 400ml vegetable broth or water
- 1 large zucchini, diced
- 1 red bell pepper, diced
- 1 medium onion, finely chopped

- 100g fresh spinach
- 200g cherry tomatoes, halved
- 30ml olive oil
- 1 tsp dried oregano
- Juice of 1/2 lemon
- Salt and black pepper to taste
Instructions
- 1.Heat the olive oil in a large, deep skillet over medium-high heat. Add the chopped onion and cook for 3-4 minutes until softened. Stir in the minced garlic and cook for one more minute until fragrant.
- 2.Add the ground turkey to the skillet. Use a spoon to break it apart and cook for 5-7 minutes until fully browned. Drain any excess fat if necessary.
- 3.Stir in the diced zucchini, bell pepper, and dried oregano. Season with salt and pepper, and cook for about 5 minutes until the vegetables begin to soften.
- 4.Pour in the rinsed quinoa and vegetable broth. Bring the mixture to a boil, then reduce the heat to low, cover the skillet, and let it simmer for 15-20 minutes, or until the quinoa is fluffy and has absorbed all the liquid.
- 5.Remove the skillet from the heat. Gently stir in the fresh spinach and halved cherry tomatoes until the spinach is just wilted.
- 6.Finish by squeezing fresh lemon juice over the dish and fluffing with a fork. Adjust seasoning if needed and serve immediately.
