Ingredients
- 120g millet
- 2 medium carrots, diced
- 1 large parsnip, diced
- 1 can (400g) chickpeas, rinsed and drained
- 2 tablespoons (30ml) olive oil, divided
- 1 teaspoon paprika
- 1 teaspoon ground cumin
- 80g feta cheese
- 1 lemon, for juice
- 1 small handful of fresh dill, chopped
- 1 small handful of fresh parsley, chopped
- 1 clove garlic, minced
- Salt and black pepper to taste
Instructions
- 1.Preheat your oven to 200°C (400°F). On a large baking sheet, toss the diced carrots, parsnips, and chickpeas with 1 tablespoon of olive oil, paprika, cumin, salt, and pepper until evenly coated.
- 2.Roast for 25-30 minutes, tossing halfway through, until the vegetables are tender and the chickpeas are slightly crispy.
- 3.While the vegetables roast, cook the millet. In a small pot, bring 240ml of water to a boil. Add the millet and minced garlic, reduce heat to low, cover, and simmer for 15-20 minutes until the water is absorbed. Let it stand, covered, for 5 minutes.
- 4.In a small bowl, whisk together the remaining 1 tablespoon of olive oil, the juice of half a lemon, the chopped dill, and parsley to create the dressing. Season with a pinch of salt and pepper.
- 5.Fluff the cooked millet with a fork. To serve, divide the millet between two bowls. Top with the roasted vegetables and chickpeas, crumble the feta cheese over everything, and drizzle with the fresh herb dressing.
