Ingredients
- 1 tablespoon olive oil
- 1 large onion, chopped
- 2 cloves garlic, minced
- 2 large sweet potatoes (approx. 600g), peeled and cubed
- 200g brown or green lentils, rinsed
- 1.2 liters vegetable broth
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon turmeric powder
- 150g fresh kale, stems removed and leaves chopped
- Juice of 1/2 lemon
- Salt and black pepper to taste
Instructions
- 1.In a large pot or Dutch oven, heat the olive oil over medium heat. Add the chopped onion and sauté for 5-7 minutes until softened and translucent.
- 2.Add the minced garlic, ground cumin, coriander, and turmeric. Stir constantly for 1 minute until the spices are fragrant.
- 3.Add the cubed sweet potatoes, rinsed lentils, and vegetable broth to the pot. Stir to combine, increase the heat, and bring to a boil.
- 4.Once boiling, reduce the heat to low, cover the pot, and let it simmer for 20-25 minutes, or until the lentils and sweet potatoes are tender.
- 5.Stir in the chopped kale and cook for another 3-5 minutes, until the leaves are wilted and bright green.
- 6.Remove from heat. Season with salt and pepper to your preference and stir in the fresh lemon juice just before serving for a touch of brightness.
