Ingredients
- 250g lamb mince
- 1 can (approx. 240g drained) brown or green lentils, rinsed
- 1 medium courgette, diced
- 150g cherry tomatoes, halved
- 1 small red onion, finely chopped
- 2 cloves garlic, minced
- 100g plain Greek yogurt
- 1 handful fresh mint, chopped
- 1 tbsp olive oil
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp smoked paprika
- Juice of 1/2 lemon
- Salt and black pepper to taste
Instructions
- 1.Heat olive oil in a large skillet over medium-high heat. Add the chopped onion and cook for 3-4 minutes until softened. Stir in the garlic, cumin, coriander, and paprika, cooking for one more minute until fragrant.
- 2.Add the lamb mince to the skillet. Use a spoon to break it apart and cook for 5-7 minutes until browned throughout. Drain off any excess fat if desired.
- 3.Stir in the diced courgette and cook for 4-5 minutes until it begins to soften. Add the rinsed lentils and halved cherry tomatoes, season with salt and pepper, and cook for another 3-4 minutes until everything is heated through.
- 4.While the skillet cooks, prepare the minted yogurt. In a small bowl, combine the Greek yogurt, chopped fresh mint, and a squeeze of lemon juice. Mix well and season with a pinch of salt.
- 5.Remove the skillet from the heat. Divide the lamb and lentil mixture between two bowls and serve topped with a generous dollop of the minted yogurt.
