Ingredients
- 400g ground lamb
- 1 large sweet potato (approx. 300g)
- 1/2 head of cauliflower (approx. 300g)
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 2 tablespoons fresh parsley, chopped
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 2 tablespoons olive oil
- Salt and freshly ground black pepper to taste
Instructions
- 1.Peel and chop the sweet potato and cauliflower into medium-sized chunks. Place them in a pot of boiling salted water and cook for 15-20 minutes, or until very tender.
- 2.While the vegetables are cooking, combine the ground lamb, chopped onion, half of the minced garlic, chopped parsley, cumin, coriander, salt, and pepper in a mixing bowl. Mix well and form into 4-6 equal-sized patties.
- 3.Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Carefully place the lamb patties in the skillet and cook for 5-7 minutes per side, or until browned and cooked through.
- 4.Drain the cooked sweet potato and cauliflower. Return them to the pot and add the remaining minced garlic, 1 tablespoon of olive oil, salt, and pepper. Mash until you reach your desired consistency, from chunky to smooth.
- 5.Serve the warm spiced lamb patties immediately with a generous portion of the sweet potato and cauliflower mash.
