Ingredients
- 1 lb ground turkey
- 2 medium sweet potatoes, diced
- 3 medium carrots, sliced
- 1 small zucchini, diced
- 1 small yellow onion, diced
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1 tbsp fresh parsley, chopped
- 1 tbsp lemon juice
- 1/2 tsp sea salt
- 1/4 tsp black pepper
Instructions
- 1.Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- 2.Toss diced sweet potatoes, carrots, and zucchini with 1 tbsp olive oil, half the salt, and half the pepper. Spread evenly on the baking sheet and roast for 20–25 minutes, until tender.
- 3.While veggies roast, heat 1 tbsp olive oil in a skillet over medium heat. Add onion and garlic, sauté for 2–3 minutes until fragrant.
- 4.Add ground turkey to the skillet, breaking it apart as it cooks. Season with remaining salt and pepper. Cook for 7–8 minutes until fully browned.
- 5.Stir in lemon juice and chopped parsley, then remove from heat.
- 6.Divide roasted vegetables and turkey mixture evenly into 4 meal-prep containers. Let cool before sealing for storage.
