Ingredients
- 2 large bell peppers, any color
- 200g lean ground turkey
- 100g cooked brown lentils, rinsed
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 200g chopped tomatoes, canned or fresh
- 50g fresh spinach
- 1 tablespoon olive oil
- 1 teaspoon ground cumin
- 1/2 teaspoon smoked paprika
- Salt and freshly ground black pepper to taste
Instructions
- 1.Preheat your oven to 200°C. Halve the bell peppers lengthwise, remove the seeds, and place them cut-side up in a small baking dish.
- 2.Heat the olive oil in a non-stick pan over medium heat. Sauté the chopped onion for 3-4 minutes until soft, then add the minced garlic and cook for 1 more minute.
- 3.Add the ground turkey to the pan. Cook for 5-7 minutes, breaking it apart with a spoon, until it's fully browned.
- 4.Drain any excess fat. Stir in the ground cumin, smoked paprika, chopped tomatoes, and cooked lentils. Simmer for 5 minutes for the flavors to combine.
- 5.Remove the pan from the heat and stir in the fresh spinach until it wilts into the mixture. Season generously with salt and pepper.
- 6.Carefully spoon the turkey and lentil filling evenly into the bell pepper halves.
- 7.Pour about 50ml of water into the bottom of the baking dish to prevent sticking and help steam the peppers. Bake for 20-25 minutes, until the peppers are tender.
- 8.Let them cool slightly before serving. Garnish with fresh parsley if desired.
