Ingredients
- 400g lean minced lamb
- 250g quinoa
- 500ml water or vegetable broth
- 1 large cucumber, diced
- 250g cherry tomatoes, halved
- 1 red bell pepper, diced
- 1 medium red onion, finely chopped
- 3 cloves garlic, minced
- 50g fresh parsley, chopped
- 25g fresh mint, chopped
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon smoked paprika
- 60ml extra virgin olive oil
- 60ml lemon juice
- Salt and black pepper to taste
Instructions
- 1.Rinse 250g of quinoa. In a saucepan, combine it with 500ml of water or broth, bring to a boil, then cover and simmer for 15 minutes until the liquid is absorbed. Fluff with a fork and let it cool.
- 2.In a large bowl, mix 400g minced lamb, the chopped red onion, 2 minced garlic cloves, half the chopped parsley and mint, cumin, coriander, paprika, salt, and pepper.
- 3.Form the lamb mixture into 8-12 oval-shaped koftas. Heat 15ml of olive oil in a large pan over medium-high heat and cook the koftas for 8-10 minutes, turning until browned and cooked through.
- 4.While the koftas cook, prepare the salad. In a large bowl, combine the cooled quinoa, cucumber, cherry tomatoes, red bell pepper, and the remaining parsley and mint.
- 5.For the dressing, whisk together 45ml of olive oil, the lemon juice, 1 minced garlic clove, salt, and pepper. Pour over the quinoa salad and toss well to combine.
- 6.Serve the warm lamb koftas immediately with the fresh quinoa herb salad.
