Ingredients
- 250g ground lamb
- 120g quinoa, uncooked
- 240ml water
- 150g cherry tomatoes, halved
- 1 small cucumber, diced
- 1/2 red onion, thinly sliced
- 2 tbsp olive oil

- Juice of 1 lemon
- 2 tbsp fresh mint, chopped
- 2 tbsp fresh parsley, chopped

Instructions
- 1.Rinse the quinoa under cold water. In a small pot, combine the quinoa and 240ml of water. Bring to a boil, then reduce heat, cover, and simmer for 15 minutes or until the water is absorbed. Fluff with a fork.
- 2.While the quinoa cooks, heat 1 tbsp of olive oil in a skillet over medium-high heat. Add the ground lamb, season with salt and pepper, and cook for 5-7 minutes, breaking it up with a spoon, until browned. Drain any excess fat.
- 3.In a small bowl, whisk together the remaining 1 tbsp of olive oil, lemon juice, minced garlic, chopped mint, and parsley to create the dressing. Season with a pinch of salt and pepper.
- 4.In a large bowl, combine the cooked quinoa, cooked lamb, halved cherry tomatoes, diced cucumber, and sliced red onion.
