Ingredients
- 225g halloumi cheese
- 300g zucchini (about 1 large)
- 250g cherry tomatoes
- 2 cloves garlic, minced
- 30ml olive oil
- 1 tsp dried oregano

Instructions
- 1.Preheat your oven to 200°C. Cut the zucchini into 2cm chunks and leave the cherry tomatoes whole.

- 5.Bake for 20-25 minutes, or until the vegetables are tender and the halloumi is golden brown and crisp at the edges.
- 6.While it bakes, combine the chopped fresh parsley, mint, lemon zest, and lemon juice in a small bowl.
- 7.Remove the tray from the oven and immediately drizzle the fresh herb-lemon mixture over the hot halloumi and vegetables. Serve warm.
