- 5.In a small bowl, combine the Greek yogurt, chopped fresh herbs (dill and parsley), and lemon juice. Season with a pinch of salt and pepper and mix well.
- 6.Once the peppers are roasted, add them to the skillet with the chickpeas. Add the fresh spinach and stir until it has just wilted, about 1-2 minutes.
