- 1.Preheat your oven to 200°C. On a large baking sheet, toss the cubed sweet potatoes, carrots, and parsnips with 2 tablespoons of olive oil, dried oregano, salt, and pepper. Roast for 30-35 minutes until tender.
- 2.While the vegetables roast, combine the ground lamb, cooked lentils, minced garlic, chopped onion, fresh mint, fresh parsley, ground cumin, and ground coriander in a large bowl. Season with salt and pepper.
- 3.Mix gently with your hands until just combined, being careful not to overwork the mixture. Form into approximately 16-20 meatballs.
- 4.Heat the remaining 1 tablespoon of olive oil in a large skillet over medium-high heat. Cook the meatballs for 8-10 minutes, turning occasionally, until browned on all sides and cooked through.
- 5.For meal prep, divide the roasted vegetables and meatballs evenly among four containers. Drizzle with fresh lemon juice just before serving for a zesty finish.
