1. 1.Place the flour on a clean surface and make a well in the center.
2. 2.Crack the egg into the well and add a pinch of salt.
3. 3.Mix the flour and egg together gradually until a dough forms.
4. 4.Knead the dough for about 8–10 minutes until smooth and elastic.
5. 5.Wrap the dough with a cloth or cover and let it rest for 15 minutes.
6. 6.Roll out the dough thinly using a rolling pin or pasta machine.
7. 7.Cut into desired pasta shapes such as fettuccine or tagliatelle.
8. 8.Bring a pot of salted water to a boil and cook the pasta for 2–3 minutes until al dente.
9. 9.Drain and season with optional pepper or herbs before serving.
