- 1 tbsp olive oil
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 1 tsp dried oregano
- Salt and freshly ground black pepper to taste
- Juice of 1/2 lemon
- Fresh parsley, chopped, for garnish
Instructions
- Heat the olive oil in a large skillet or pan over medium-high heat. Add the sliced onion and cook for 3–4 minutes until softened. Add the minced garlic and cook for another minute until fragrant.
- Add the lamb mince to the skillet. Break it up with a spoon and cook until browned all over, about 5–7 minutes. Drain any excess fat if necessary.
- Stir in the diced sweet potato, chopped bell pepper, cumin, paprika, and oregano. Season with salt and pepper. Cook for 10–12 minutes, stirring occasionally, until the sweet potato is tender.
