• 1 lb turkey breast, sliced
• 2 medium sweet potatoes, peeled and cubed
• 4 cups kale, chopped
• 2 tbsp olive oil
• 2 cloves garlic, minced
• 1 small onion, diced
• 1 tbsp fresh rosemary, chopped
• 1 tbsp fresh thyme, chopped
• 1 tbsp lemon juice
• Salt (AIP-compliant, optional)

Instructies

1. 1.Preheat your oven to 375°F (190°C).
2. 2.Place turkey slices on a baking sheet, drizzle with 1 tbsp olive oil, season with rosemary, thyme, and a pinch of salt if desired. Roast for 20–25 minutes until cooked through.
3. 3.While turkey roasts, heat 1 tbsp olive oil in a large skillet over medium heat. Add onion and garlic, sauté for 2 minutes.
4. 4.Add cubed sweet potatoes to the skillet, cover, and cook for 10 minutes, stirring occasionally until tender and golden.
5. 5.Stir in chopped kale, cook for another 3–4 minutes until wilted and vibrant green.
6. 6.Remove turkey from the oven, slice, and serve over the sweet potato and kale skillet. Finish with a drizzle of lemon juice for freshness.
