Instructies

1. 1.Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
2. 2.In a bowl, mix 1 tablespoon olive oil, garlic, thyme, rosemary, salt, and pepper. Rub mixture over chicken thighs.
3. 3.Place chicken on the baking sheet and roast for 30–35 minutes until skin is crispy and internal temperature reaches 165°F.
4. 4.Meanwhile, boil sweet potatoes in a pot of water for 12–15 minutes until tender.
5. 5.Drain and mash sweet potatoes with lemon juice, zest, and remaining tablespoon of olive oil until smooth.
6. 6.Serve roasted chicken alongside citrus sweet potato mash for a balanced, hearty meal.
