• 1 tbsp low-sodium soy sauce
• 1 tsp rice vinegar
• 1 tsp grated fresh ginger

• 1 tbsp olive oil
• 4 cups bok choy, chopped
• 1 tsp sesame seeds
• Salt and black pepper to taste
• Lemon wedges for serving

Instructies

1. 1.Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
2. 2.In a small bowl, whisk together miso paste, sesame oil, soy sauce, rice vinegar, and ginger until smooth.
3. 3.Place salmon fillets on the baking sheet, brush generously with the miso mixture, and bake for 12-15 minutes until cooked through.
4. 4.While salmon bakes, heat olive oil in a skillet over medium heat. Add garlic and sauté for 30 seconds until fragrant.
5. 5.Add bok choy, season lightly with salt and pepper, and cook for 4-5 minutes until tender but still bright green.
6. 6.Serve salmon with sautéed bok choy, sprinkle with sesame seeds, and garnish with lemon wedges.
