- 500g lean minced lamb
- 200g quinoa
- 1 large courgette, chopped
- 1 red bell pepper, chopped
- 1 yellow bell pepper, chopped
- 250g cherry tomatoes
- 1 large red onion, chopped
- 3 cloves garlic, minced
- 60ml extra virgin olive oil
- 1 lemon, for juice
- 15g fresh mint, finely chopped
- 15g fresh parsley, finely chopped
- 1 tsp dried oregano
- Salt and black pepper to taste

Instructies
- 1.Preheat your oven to 200°C. On a large baking tray, toss the chopped courgette, bell peppers, red onion, and whole cherry tomatoes with 30ml of olive oil, half the minced garlic, oregano, salt, and pepper.
- 2.Roast the vegetables for 25-30 minutes, or until tender and lightly browned at the edges.
- 3.While the vegetables are roasting, cook the quinoa. Rinse 200g of quinoa and place it in a saucepan with 400ml of water. Bring to a boil, then cover, reduce heat to low, and simmer for 15-20 minutes until all the water is absorbed.
- 4.In a large skillet over medium-high heat, add the remaining 30ml of olive oil. Add the minced lamb and the rest of the garlic, and cook for 8-10 minutes, breaking it up with a spoon, until fully browned. Drain any excess fat and season with salt and pepper.
- 5.For the dressing, whisk together the lemon juice, chopped fresh mint, and parsley in a small bowl.
- 6.To assemble for meal prep, divide the cooked quinoa, roasted vegetables, and seasoned lamb evenly among 4 airtight containers. Store the dressing separately and drizzle over before serving to keep everything fresh.
